From a botanical point of view, walnuts belong to the genus Juglans, which has more than 20 different species. The name this comes from Latin phrase "iovis glans", translates as "Jupiter's acorn". Walnut kernels are used in many industries - medicine, food and perfume industries. With addition hard fruit shells, technological process tanning leather is carried out. pericarp, due its high iodine content, dye fabrics various shades brown, well for medical purposes. shells make activated carbon, grinding stones, linoleum, etc. Currently, Ukraine occupies sixth-eighth position world ranking terms walnut cultivation, production export. Over past 30 years, an average almost 90,000 tons nuts have been produced per year. China world's leading producer exporter shell, with over 705,000 top three countries United States Iran, 405,000 256,000 respectively. Turkey, Burkina Faso Mexico also among producers walnuts. Almost 60% shell grown Asia, 25.5% South North America. Europe produces 14.4%, Africa 3% [1-3]. Based on results previous studies, established prospects using vibration effects processed medium during drying, ozone dehumidification agricultural raw materials, we developed idea combining technologies ozonation, implemented dryer processing ozone-air mixture.

The most energy-intensive and time-consuming process in walnut processing technology is drying. As a rule, the moisture content about 35-45 % during harvesting. Such conditions do not allow for storage since high humidity creates favorable to develop microbiological enzymatic processes, which cause an intensive decrease product quality.
