The ongoing occurrence of foodborne diseases and the imperative need for efficient spoilage pathogen control in food products constitute a critical challenge industry. rising demands consumers safe, healthy, clean-label have led to an increased interest natural antimicrobial alternatives. Lactic acid bacteria (LAB) proven their value industry recent years, also reason antagonistic properties against undesired microbes significant related protechnological attributes. compounds produced by LAB exhibit inhibitory effects on pathogens effectively inhibit activities spoilage-related organisms. Applying secondary metabolites LAB, notably bacteriocins, organic acids, others, has found commercial utility across multiple sectors, preventing proliferation undesirable microorganisms simultaneously enhancing sensory overall quality various products. This review comprehensively explores microbial specifically focusing action supporting effective sustainable management. Additionally, it highlights strategic application technological contexts within

Microbial communities exhibit intricate interactions underpinned by metabolic dependencies. To elucidate these dependencies, we present a workflow utilizing random matrix theory on metagenome-assembled genomes to construct co-occurrence and complementarity networks. We apply this approach temperature gradient hot spring, unraveling the interplay between thermal stress cooperation. Our analysis reveals an increase in frequency of with rising temperatures. Amino acids, coenzyme A derivatives, carbohydrates emerge as key exchange metabolites, forming foundation for syntrophic which commensalistic take greater proportion than mutualistic ones. These exchanges are most prevalent phylogenetically distant species, especially archaea-bacteria collaborations, crucial adaptation harsh environments. Furthermore, identify significant positive correlation basal metabolite genome size disparity, potentially signifying means streamlined leverage cooperation metabolically richer partners. This phenomenon is also confirmed another composting system has similar wide range fluctuations. provides feasible way decipher mechanisms underlying microbial interactions, our findings suggested environmental regulates cooperative strategies thermophiles, while dependencies have been hardwired into their during co-evolutions.

Aquatic products are an important part of the human diet, but they easily contaminated by Pseudomonas spp., which leads to food deterioration and economic loss. In this paper, main characteristics psychrotrophic in aquatic reviewed, including its growth adaptation mechanism biofilm formation ability at low temperatures, key role product spoilage is emphasized. Studies have shown that can produce a variety volatile compounds decomposing proteins amino acids, affecting sensory quality safety products. A control strategies extend shelf life been explored, physical, chemical, biological methods, particularly biofilm-specific inhibition techniques such as quorum sensing application natural antimicrobials. Future research should prioritize development novel anti-biofilm address growing problem contamination industry ensure public health.
