Membrane nanofiltration technology is an efficient method for wine dealcoholization and concentration of various bioactive compounds has a vast number applications in production. To obtain optimal features the obtained products, both parameters mode filtration, as well characteristics used filtration membrane, are great importance. In this study, native Bulgarian red Mavrud via MaxiMem Prozesstechnik GmbH system, completed with polymer membranes was performed. Rejection coefficients ethanol selected compоnents were measured their increase applied pressure (10 to 50 bar) observed. Cross-flow flat sheet performed diafiltration mode. Partial (5-8% EtOH) good preservation remaining composition. Depending on degree membranes, loss 0 24% anthocyanins, 8 19% polyphenols, 2 30% ORAC activity
