The rotten defect is one of the main defects on hazelnuts, even very small quantities can have negative sensorial consequences. development an instrumental method extremely sensitive to this would support a more correct and precise classification batches during quality control. An untargeted UHPLC-HRMS approach was employed for selection molecular markers capable recognizing discriminating in experimental samples at low concentration (up 1%). raw hazelnut (grouped into classes) were selected from 3 different geographical origins: Piedmont (Italy), Akçakoca (Turkey) Ordu (Turkey). A list 11 putative annotation structures performed each one. Molecular classes compatible with secondary metabolites produced by fungi or plants (after response biotic stress), such as alkaloids, cyclic penta-peptides, guanidines isoleucine derivatives, annotated.
