The transition of Agri-Food Supply Chains (AFSC) toward sustainable patterns able to secure safe, quality, and affordable food whilst preserving natural anthropogenic ecosystems is a key challenge this century. Increasing production distribution operations' transparency impact visibility uncovers hidden complexities the ecosystem's externalities. To attempt, paper introduces novel Chain digital twin (AFSC-DT) virtualize agricultural, processing, warehousing, operations holistically from-field-to-consumer estimate economic, logistic, environmental, safety, nutritional indicators associated with any order, assumed as functional unit. AFSC-DT behaves control tower, providing multi-dimensional dashboard labels enhance practitioners' consumers' knowledge FSC entities operations. practitioner's drives top-down operational tactical feedback controls through real-time monitoring a-posteriori performance analysis, consumers, their informed choices, perform strategic bottom-up pressure on industry redesign. A what-if simulation analysis conducted over four virtual scenarios within regional horticultural AFSC proves how aids decision-making across echelons, stimulating virtuous cycle favoring progressive more patterns.

According to estimates by the Food and Agriculture Organization of United Nations (FAO), about a third all food produced for human consumption in world is lost or wasted-approximately 1.3 billion tons. Among this, amount during storage stage 15-20% vegetables 10-15% fruits. It 5-10% fruits distribution stage, resulting large resource waste economic losses. At same time, global population affected hunger has reached 828 million, exceeding one-tenth total population. The improvement cold chain system will effectively reduce loss transportation stages. ABSTRACT Strawberry ( Fragaria × ananassa ) is a valuable crop cultivated worldwide. This fruit mainly consumed fresh and an important source of vitamin C, fat‐soluble vitamins carotenoids. However, strawberries (FS) have limited shelf life. Conventionally, the life FS has been extended using refrigeration coupled with modified atmosphere packaging (MAP) technology in traditional petroleum‐based polymeric films. Fresh fruits and vegetables present some of the highest food loss rates, due to their high perishability. Currently, packaging solutions are often chosen using a trial-and-error approach, by testing different materials that may be suitable for the product, based on performance values measured under standard environmental conditions and flat materials, sometimes differing from in real conditions, e.g. fluctuating temperature, after converting. This can lead to sub-optimal regarding food protection, with unnecessary costs impact. The purpose of this study was show efficiency requirement-driven approach select appropriate packaging, illustrated strawberries packed coated cardboard importance considering converting steps. Therefore, optimal O2, CO2 water vapor transmission rates were calculated strawberries.
