Bacteriocins are antimicrobial peptides produced by bacteria with promising potential for controlling pathogens in various fields. This study highlights recent advances the research on bacteriocins, providing a comprehensive overview of emerging technologies applied to production and stability these compounds, as use alternative substrates encapsulation techniques. In decades, significant efforts have focused discovering novel molecules broad-spectrum activity capable combating both Gram-positive Gram-negative microorganisms, including clinically industrially relevant pathogens. Recent studies explore strategies optimize bacteriocin production, such modifications cultivation parameters aimed at reducing costs increasing yield. Additionally, microencapsulation techniques been widely discussed, emphasizing their role enhancing efficacy bacteriocins under adverse conditions. Finally, this article examines applications highlighting natural food preservatives, therapeutic alternatives infection control, bioactive agents sustainable agriculture. These advancements establish versatile technological economic impacts.
