This study investigated the efficacy of an innovative edible coating, composed fungal chitosan and alginate, functionalized with Lacticaseibacillus casei LC03, in both free microencapsulated forms, to extend shelf life enhance nutritional value strawberries. L. LC03 cells were successfully encapsulated alginate microparticles (MAL) further coated (MALC), resulting enhanced protection (cell reduction below 1.4 CFU/mL), viability (8.02 log encapsulation efficiencies exceeding 90%. The coating (CACLM) significantly improved strawberry preservation by maintaining pH (3.16 ± 0.41), titratable acidity (0.94 0.20), moisture (90.74 0.27), microbial quality, delayed decrease total phenolic compounds (below 40%) during storage time While coatings (CALF) slightly reduced color parameters (L* 29.13 2.05), those demonstrated lower weight loss 6%). Papaya is susceptible to fungal deterioration and the use of essential oils (EOs) emerges as a promising alternative fungicides, which causes environmental human health problems. To evaluate antifungal activity their major constituents in controlling papaya pathogens, following vitro assessments were conducted: I) screening seven EOs regarding activity; II) determination minimum inhibitory concentration (MIC) most EOs; III) analysis chemical composition effective oils; IV) evaluation potential both individually or combination. The results showed that cinnamon bark, oregano, clove basil, rosemary pepper exhibited high against all studied fungi, with MIC values from 0.50 2.00 μL mL-1. found oregano EO carvacrol, ρ-cymene, thymol; bark EO, cinnamaldehyde, o-methoxy, cinnamyl; thymol, caryophyllene; basil eugenol, caryophyllene. Biodegradable packaging, especially edible coatings (EC) for fruit preservation, is a sustainable and eco-friendly approach. ECs, such as polysaccharides proteins, are widely used in with preference coating studies. Fundamental EC properties include barrier properties, tensile strength, elongation at break, UV blocking. Extra materials antimicrobial agents, antioxidants, anti-browning antagonistic microorganisms enhance benefits. ECs impact metabolism by reducing malondialdehyde production enhancing the activities of key enzymes. However, extra high concentrations affect bonding network weaken its structure. Therefore, selecting an appropriate concentration crucial to ensure adequate preservation safety without affecting sensory properties. Combining reduce metabolism, maintain quality, inhibit damage pathogens, prevent browning, provide antioxidants would be excellent way promote green potential approaches.
