Chemical food safety is a fundamental pillar of public health, regulatory governance, and economic stability, with far-reaching implications for human, animal, environmental well-being. Fruits are susceptible to a diverse range of postharvest rots, which can reduce quality if preventive measures not taken in time. In this study, samples orange cv. Maltaise and apple cvs. Golden Delicious Richared were sorted without infection or injury, treated with sodium metabisulfite (SMB), then placed cold storage for 20, 42, 59–61 days, followed by shelf life 6 15 days. Physicochemical characteristics, degree fruit infection, weight loss analyzed each period. Our results indicated that adequate depends on the type fruit, duration storage, life. The heat map grouped ‘Richared’ apples close its fresh state, developing rot perceptible 60 days at low temperature (6°C) These red performed better during than ‘Golden’ apples, especially terms storability total flavonoids. Apples showed stability ‘Maltaise,’ could be stored properly up 20 6°C, 15-day life, regardless treatment metabisulfite. longer oranges stored, greater risk physicochemical properties; case, flavonoids decreased. chemical criteria (TSS pH) affected soaking SMB, was similar untreated fruit. However, treating such fruits SMB is regarded as unlikely because effectiveness preventing decay long-term storage. Cluster analysis polyphenols linked poor storability, whereas flavonoids, hardness, TSS associated storability. This suggests may more reliable indicators suitability polyphenols.
