Aflatoxin M1 (AFM1) contamination in milk and dairy products poses a significant global concern due to its severe health risks humans. Sensitive specific detection of AFM1 has emerged as the most effective strategy for mitigating these risks. Aptamers are regarded ideal biorecognition elements monitoring owing their small size, ease production, excellent affinity specificity, high stability, low immunogenicity. Herein, we review advancements SELEX-based aptamer selection recent development aptasensors from 2020 2025 first time. Additionally, progress signal transduction strategies, underlying mechanisms, design portable devices highlighted. Furthermore, critically examine summarize prospects, challenges, future trends aptasensor technology, with particular emphasis on potential real-world application commercialization.
