Ensuring food safety is a shared responsibility across the entire supply chain, encompassing manufacturers, processors, retailers, consumers, and regulatory bodies. However, traditional detection methods have several limitations, including slow processing times, high costs, limited sensitivity, susceptibility to false positives or negatives. These shortcomings underscore urgent need for faster, more accurate, cost-effective technologies. Aptamers aptasensors emerged as promising alternatives. offer advantages over recognition probes due their affinity specificity diverse targets. Antimicrobial resistance (AMR) poses a significant threat to global health, powered by pathogens that become increasingly proficient at withstanding antibiotic treatments.
