The aim of this study was to determine the degree acceptability wheat pancakes with addition 10%, 20%, and 30% meal from three edible insect species (Alphitobius diaperinus, Tenebrio molitor, Acheta domesticus, respectively). The yellow mealworm (Tenebrio molitor L., Coleoptera: Tenebrionidae) is an edible insect and due to its ubiquitous occurrence the frequency of consumption, a promising candidate for cultivation production on industrial scale. The scope of the present study was to effect different populations Hermetia illucens, commonly known as black soldier fly (BSF), on major components and volatile composition derived freeze-dried flours. Potential differences in life cycle stages BSF, i.e., larvae pupae, were also investigated. flours obtained from two BSF Greece (GR) Portugal (PO) (L-GR L-PO, respectively) demonstrated similar chemical compositions. Pupae (Pu-PO) richer chitin compared larvae. Differences spotted their fatty acid profiles fractions. saturated/unsaturated lipid fraction ratio 1.5 L-GR, higher L-PO (2.5), even case Pu-PO (4.0).
