Abstract BACKGROUND Traditional fish sauce products rely on relatively long fermentation time and high salt concentration, resulting in inconsistent quality health risks. Branched‐chain fatty acids (BCFAs) are associated with nutritional benefits health‐care effects, mainly derived from food fermentation. This study aimed to screen BCFAs‐producing bacteria protease aminotransferase activity as starter cultures for RESULTS The low‐salt were obtained by co‐fermentation three chosen strains. In Langmuir monolayers of heneicosanoic acid (C21H42O2), at low temperature, in the L′2 and CS crystalline phases, a blinking phenomenon occurs same positions monolayer, which is called localized oscillations (LO), but its origin has not been clarified. this study, LO was correlated with ejection material out monolayer analyzed to understand phenomenon. The techniques used for purpose were pressure–area isotherms on balance simultaneous observation by Brewster angle microscopy (BAM). Subsequently, using Langmuir–Blodgett technique, transferred freshly cleaved mica substrates analysis atomic force (AFM). Our results showed that related spontaneous formation micelles vesicles, since AFM images these structures observed size range from 4 16 nm. addition, difference between heights phases ranges 13 15 Å.
