In order to investigate the effects of multi-frequency ultrasound-assisted immersion freezing (MUIF) on meat quality Macrobrachium rosenbergii, tail was subjected different MUIF treatments respectively, namely 20 + 40 kHz (MUIF-20+40), 60 (MUIF-20+60), (MUIF-40+60) and (MUIF-20+40+60), (IF) as control. Results showed that average diameter ice crystals 28 μm in IF, only 8 MUIF-20+40+60. When compared alleviated oxidative deterioration lipids proteins, but at higher ultrasound frequency (MUIF-40+60; MUIF-20+40+60). Similarly, protein denaturation inhibited (except for MUIF-20+40). Transmission electron microscopy greater distortion ultrastructural components MUIF-40+60, MUIF-20+40+60, suggested by bended Z-line. conclusion, can be an effective strategy mitigate mechanical damage rosenbergii.

The primary significance of this work is that the commercial yeast proteins particles were successfully used to characterize high internal phase Pickering emulsions (HIPPEs). different sonication time (0,3,7,11,15 min) was modulate structure and interface characteristics (YPs) as particles.
