Abstract Background Acrylamide (AA), a probable human carcinogen (Group 2A) classified by the International Agency for Research on Cancer (IARC), has emerged as significant food safety concern worldwide. Its formation during high-temperature cooking processes, such frying, baking, and roasting of starchy foods, spurred extensive research efforts to understand its toxicity develop effective mitigation strategies. This study aims provide comprehensive bibliometric analysis scientific literature AA metabolite, glycidamide (GA), published from 1965 end 2024, focusing evolving trends emphasis related their in food. Results A 3729 Scopus articles was conducted using VOSviewer. The revealed general increase number annual publications AA. Most studies focused various types associated with AA, neurotoxicity, cytotoxicity, nephrotoxicity, utilizing different models. findings indicate growing mitigate foods response toxicity. Conclusions concludes that both quality quantity have significantly improved over time, an anticipated continued future research. trend reflects ongoing global about AA’s importance developing strategies reduce presence which implications public health safety.
