This study selected (180 min, 300 min and 60 180 min) as the frequency conversion time nodes set two modes of sequential (25-28-40 kHz) reverse (40-28-25 kHz). The objective was to investigate effects variable-frequency ultrasound synergistic hot air drying (VFU-HAD) on characteristics physicochemical properties cherry. results showed that compared (HAD), (VFU) could reduce (26.32-31.85 %) specific energy consumption (1.07-21.88 %). Furthermore, VFU demonstrated superior efficacy in improving cherry quality. In particular, variable mode, this treatment better preserved anthocyanins, total phenolic content (TPC) citric acid cherries, while significantly their free radical scavenging ability (DPPH ABTS), (p < 0.05). Under 40 kHz (0 min)-28 min)-25 (300 cherries exhibited relatively higher overall contents glucose (588.85 mg/g), fructose (394.15 sucrose (26.48 quinic (28.37 mg/g). effectively color improved textural properties, rendering them softer more elastic. microscopic structure indicated promoted formation micropores surface, facilitating uniform moisture migration. Using Rank-Sum Ratio comprehensive evaluation method, it determined under RSR score highest (0.8097), indicating best quality dried cherries. findings were great significance for development fruit vegetable improvement product
