Sugar-fatty acid esters and their analogs (SFAEA) exhibit broad-spectrum antimicrobial activities. The article comprehensively outlined inhibitory potential against key pathogenic spoilage bacteria as well fungal species. Antibacterial efficacy is quantitatively assessed using minimum concentration (MIC), antifungal activity typically characterized by inhibition zones or mycelial growth rates. Research highlighted that sugar incorporating medium- to long-chain fatty acids, particularly those derived from sucrose, galactose, mannose, demonstrated superior antibacterial properties. lauric myristic moieties were found be exceptional compared other length in the portion. chain of hydrophobic group, glycosyl structure substitution level type group ester factors all have an impact on effect. It was disruption cell envelope, generation reactive oxygen species, interactions with cytoplasmic contents influences metabolic pathways major reasons leading death. Omics technologies molecular docking also suggested some mechanisms. Additionally, future research directions regarding application food mechanistic studies presented.
