Dendrobium officinale leaf contains various physiologically active substances. However, no previous studies have reported on the use of D. extract in fermented sweet potato beverages. In this study, and were used as raw materials to produce a compound beverage flavored with leaf. A vinegar folk production method was used, beneficial microorganisms, including Rhizopus , yeast, lactic acid bacteria, inoculated into fermentation. The quantity leaves, concentration koji, fermentation time, temperature during process optimized using orthogonal experiments analysis variance. results indicated that 30%, koji time 5 days, 30°C optimal for formation. Under these conditions, broth had mild flavor moderately sour taste, biofilm transparent gelatinous film, utilization efficiency carbohydrates high. Excellent flavor, color, stability obtained, total sugar content 15.88 mg/mL final pH 2.65.

BackgroundUlcerative colitis (UC) is a chronic non-specific inflammatory disease with intestinal tract as the main site. The pathogenic of UC has not yet been clarified, and multiple mechanisms can lead to pathogenesis UC. Traditional Chinese medicine (TCM) offers an opportunity for treatment. TCM become preferred treatment characteristics targets, pathways high safety. This review attempted summarize (compound prescriptions, single herbs, active ingredients) discussed their based on analyzing UC-related gut microbiota, signaling pathway cytokine. In order provide more systematic diverse reference in prevention UC, theoretical clinical UC.Materials methodsThe information was acquired from different databases, including Web Science, PubMed, CNKI, Wanfang, VIP databases. We then focused recent research progress by TCM. Finally, deficiencies future perspectives are proposed.ResultsModern pharmacological studies have shown that compound prescriptions (strengthening spleen, clearing heat removing dampness, toxin), herbs (replenishing Qi, heat, tonifying blood, etc.), ingredients (alkaloids, polysaccharides, flavonoids, polyphenols, terpenes, etc.) efficiency regulating cytokine.ConclusionsTCM achieve its purpose acting ways, deserves further development this field.

This study aimed to develop a green and efficient approach based on pulsed electric field (PEF) in combination with deep eutectic solvents (DESs) enhance the antiglycation ability of Noni flavonoids (NFs) by modulating their proportions flavone glycosides aglycones. The results showed that proportion quercetin was elevated increasing PEF treatment times at fixed conditions (PEF conditions: 2 kV/cm, 30 μs, 10 Hz; DES: 100% choline chloride/oxalic acid). After 4000 treatments, molar ratio rutin NF sample changed from 0.92:0.08 0.09:0.91. Simultaneously, inhibitory effects treated pulses (NF4) fructosamine, α-dicarbonyl, advanced glycation end products (AGEs) bovine serum albumin (BSA)–fructose model were increased 2.53, 2.98, 1.23 times, respectively. enhancement may be attributed NF4 exhibiting greater bind protein trap methylglyoxal (MGO) compared untreated samples. Consequently, can more effectively prevent oxidative damage BSA structure, reducing aggregation blocking accumulation AGEs. In summary, DESs presents promising sustainable method improve flavonoids, showing great potential for functional food industry.

This study investigated the effects of 2,4-epibrassinolide (EBR) residues on Dendrobium officinale quality. The decreased from 0.164 to 0.238 mg/kg (2 h) 0.014–0.071 (35 d) in stems with 0.02–0.05 mg/L EBR applications. Polysaccharide, mannose, and glucose content were increased leaves, reaching a maximum 61% dried 35 d. increase may result significant upregulation enzyme activities, including UGP, SUS, SPS. Further analysis by nontargeted metabolomics revealed 5 upregulated (UDP-l-rhamnose, mannose-6-phosphate, GDP-mannose, chitobiose, N-acetyl-galactosamine-6-phosphate) 13 downregulated metabolites associated polysaccharide monosaccharide growth treatments. These differential regulate biosynthesis polysaccharides mainly through key metabolic pathways, such as fructose metabolism. results provide reference for regulatory mechanisms governing quality indicators after application.

This study explores the antioxidant activity and mechanism of phenolic compounds (including free (FP), esterified (EP), bound (BP)) from Dendrobium fimbriatum Hook (DFH) stems, before after ultra-high pressure (UHP) treatment. A total 374 were identified, with 149 showing significant differences in DFH extracts UHP treatment significantly increased content (TPC) flavonoid (TFC) enhanced vitro. Particularly, UEP-DFH, IC50 values ABTS DPPH reduced by 49.6% 64.1%, respectively. In H2O2-treated HepG2 cells, demonstrated cytoprotective effects, including cell viability, ROS reduction, GSH levels 17.8% (UFP-DFH) 12.5% (UEP-DFH). The activities GS, GCL, GR, GSH-Px, SOD, CAT, NQO1, HO-1 also elevated UHP-treated extracts. DAPI staining indicated that promoted nuclear Nrf2 expression, particularly UFP-DFH UEP-DFH. Molecular docking vanillic acid could competitively bind to Keap1-Kelch domain, facilitating activation pathway. Overall, both extraction efficiency activity, making it a promising method for improving bioactivity food functional industries.
