Promoting sustainable electrochemical energy storage can be achieved by employing biosourced organic molecules with redox-active motifs. Studies focusing on developing high-performance devices based often lack a clear understanding of the charge transfer mechanisms involving these molecules. Here, we report systematic study behavior polyphenols (pyrogallol, catechin, rutin, quercetin, and mangiferin) deposited carbon paper electrodes in aqueous electrolytes, to gain insight into their reveal possible relationships between (supra)molecular structure-electrochemical properties. We studied effect modified mono/divalent metal cations (Li+, Na+, Mg2+, Ca2+, Zn2+) supporting electrolyte. Contact angle measurements were used investigate interface water scanning electron microscopy supramolecular structures at surface electrodes. The objective of this research is to analyze the influence soy protein isolate (SPI) on stability and bioaccessibility phenolic compounds in pomegranate peel extract (ePGP) a complexes formed between them. (SPI-ePGP) are an alkaline conditions (pH 9) with pre- treated at 90℃ using different concentrations (1, 2 3%). Bioaccessibility determined by monitoring changes total content, flavonoids, monomeric anthocyanins vitro digestion model. after treating SPI-ePGP ePGP light heat. results from studies indicate substantial compound levels during two phases simulated digestion. High gastric go down significantly intestinal SPI increases thermal polyphenols complexes. data illustrates impact protein-phenolic interaction compounds. It also builds theoretical foundation for developing functional foods or active materials based peels.

Hydroxytyrosol (HT) is a nutraceutical compound, mainly found in the fruit, leaves and waste from olive oil industry, known for exhibiting one of highest antioxidant activities among molecules natural origin. To harness this bioactivity cosmetics, pharmaceuticals food it essential to modify hydrophilicity HT enhance its compatibility with lipid-based mixtures. This chemical modification must be carried out high selectivity avoid compromising radical scavenging activity. work presents highly efficient selective approach perform biocatalytic esterification free fatty acids (FFAs) different alkyl chain lengths reaction medium based on SLIL [C12mim][NTf2]. By using 1:2 (mol/mol) HT:FFA mixture substrates, HT-monoester derivative was obtained up 77% yield after 2 h at 80 °C. The optimized molar ratio combined ability recover further reuse, significantly reduces accumulation compared other reported strategies results more sustainable as demonstrated by green metrics. activity products fully maintained respect that presented HT, being stable least 3 months 4 °C, DPPH FRAP analysis.

This review explores the potential health benefits and applications of phenolic secoiridoids derived from olive oil by-products in prevention Alzheimer's disease (AD). As reviewed herein, polyphenols, such as epigallocatechin-3-gallate, epicatechin, resveratrol, show vitro vivo antioxidant, anti-inflammatory, neuroprotective properties, are particularly relevant context AD, a leading cause dementia globally. The industry, Mediterranean region, produces significant amounts waste, including leaves, pomace, wastewater, which pose environmental challenges but also offer an untapped source bioactive compounds. Despite promising studies indicating that olive-derived oleuropein hydroxytyrosol, may mitigate AD pathology, human clinical trials remain limited. variability extraction methods complex nature further complicate research.
