This study examined the effect of Flavourzyme and Lactobacillus plantarum (L. plantarum) on protein degradation flavor development during grass carp fermentation. The control groups comprised natural fermentation with L. plantarum. Compared two samples, those exposed to combined exhibited lower moisture content enhanced hydrolysis, which accelerated production water-soluble taste substances (trichloroacetic acid-soluble peptides free amino acids). electronic tongue nose results indicated that subjected way displayed a more intense umami aroma. Histamine, a pivotal chemical within certain cells of the human body, is responsible for eliciting various allergic symptoms, such as sneezing and runny nose. In cases allergies, where immune system misidentifies typically harmless substances, foods or dust, harmful, an efficient histamine sensor becomes imperative. This research introduces novel sensing platform by employing material comprising hydrothermally synthesized WS2 nanosheets using this with chitosan (CS) biopolymer on screen-printed carbon electrode (SPE). Integrating CS components SPE via drop-casting synergistically enhances conductivity properties. hybrid combines organic inorganic applied nonenzymatic detection differential pulse voltammetry. study also included crystallite size determination surface morphology assessment through characterization nanosheets. On SPE, were drop-casted. It recommended that be electrochemically measured modified WS2/CS/SPE electrodes. Histamine measurements conducted linear coverage 1–100 μM, limit 0.0844 μM sensitivity 1.44 × 10–4 mA/μM cm2. The developed exhibited notable levels sensitivity, selectivity, stability, repeatability, along extended range. technique was consequently employed to detect in packed food items like fermented samples (cheese, tomato sauce, ketchup, soy sauce) at room temperature (25 °C). findings recommend utilization electrochemical electrodes accurate detection.

With the growing interest in nucleic acids and nanozymes, acid nanozymes (NANs) have emerged as a promising alternative to traditional enzyme catalysts, combining advantages of nanomaterials, are widely applied field biosensing. The utilization of a sustainable and lightweight graphene aerogel (GA), synthesized from crude biomass, as cell growth promoter an adsorbent for the efficient removal histamine (HIS), food toxicant, real matrix has been explored.
