Some nanozyme-based detection methods for antioxidants often rely on the direct decolorization of colorimetric substrates by corresponding antioxidants, which weakens role nanozymes. Here, CeO2 nanozymes exhibiting inherent oxidase-like activity were prepared via a one-pot hydrothermal technique. Ergothioneine (ERG), natural antioxidant, was found to induce true inhibition activity. Unlike other including ascorbic acid, gallic acid and glutathione, ERG could really inhibit nanozymes, instead directly reducing substrates. Further kinetic analysis revealed that ERG-induced is reversible noncompetitive. This discovery highlights unique behavior provides an important mechanistic understanding nanozyme antioxidants. Leveraging inhibitory effect, novel sensing platform established with low limit (0.21 μM), excellent reusability, good storage stability high accuracy, making it simple, sensitive rapid method assessing levels in functional foods. study not only establishes framework investigating interactions between small molecules but also paves new pathway expanding applications food agricultural biosensing.
