glycemic
index
score,

starch
digestibility,
and
limited
nutritional
value
due
to
its
low
fiber,
vitamin,
bioactive
compound
content.
This
study
aimed
enhance
pasta's
functional
qualities
by
incorporating
Pleurotus
eryngii
(PE)
powder
at
various
substitution
levels
