Nisin, derived from Streptococcus lactis, is the only approved bacteriocin for food preservation. With wide application in multitudinous food, progressively increasing studies have focused on its anti-inflammatory activity, while structure-effect relationship and molecular mechanism remain unclear. In this study, efficiency structural differences of two typical types nisin, A Z, were first compared based a mouse model. The self-assembly behavior nisin was uncovered, characteristics self-assembled nanoscale explored. Based transcriptomic analysis, mechanisms ribosomal pathway activation both Z further analyzed, upregulation atp7b entpd4 triggered by respectively, consequent adenosine production levels elucidated therapeutic differences. This study deepens understanding underlying activity provides an innovative horizon future nisin.
