Brazil is an influential and successful food-producing country, where we can highlight artisanal cheeses gaining visibility in foreign markets. Some of these are made from raw milk, making them susceptible to contamination by microorganisms, including fungi, which produce harmful mycotoxins. Feed contaminated with aflatoxin B1, when consumed dairy animals, metabolized transformed into M1 (AFM1), excreted milk. Therefore, the aim this research was investigate occurrence AFM1 two Brazilian states: Minas Gerais São Paulo. This toxin extracted 10 g sample 50 ml pepsin solution. An aliquot extract passed through immunoaffinity column, eluted, dried under nitrogen. For analysis detection quantification AFM1, High-Performance Liquid Chromatography (HPLC) fluorescence system used. A total 130 samples were analyzed; 41 tested positive for while 89 negative. Out samples, only above maximum tolerated limit ANVISA 2.5 µg/kg. These results show importance investigating cheeses, aiming prevent increase food safety.

Several bacteria are found to be potential as antagonists due their capacity in producing extracellular enzymes amylase, protease, gelatinase, cellulose and chitinase. In this research, we collected from both healthy anthracnose-infecting chili plants (root, stem leaf). The results revealed that 27 bacterial isolates non-pathogenic non-hemolytic plants, which 10 isolated roots, 8 leaves, 7 stems 2 fruits. Morphology identification showed most of circular, irregular punctiform, with elevation flat, raised umbonate. White milky dominant, varied opacity (transparent, translucent opaque) textures (slimy, mucoid, shiny dry). Enzymatic activity test 11 produced amylase chitinase (isolates 11, 34, 42, 48, 111,118, 139, 188, 215, 216 218).

However, their oral delivery is significantly hindered by enzymatic degradation, instability, poor permeability through the gastrointestinal (GI) epithelium, resulting in low bioavailability. Various strategies have emerged as transformative solutions to address existing challenges, offering enhanced protection, stabilization, absorption of PPs. These primarily focus on two major challenges: protecting PP against harsh conditions enhancing permeation across intestinal membrane. Innovative approaches such pH modulation incorporation enzyme inhibitors usually used mitigate proteolytic degradation during transit GI tract. The increasing quest for therapeutic alternatives in treating non-communicable chronic diseases like obesity has propelled research into bioactive peptides, with a particular focus on milk due to its rich protein composition and associated health benefits. Milk fermentation, traditional process dairy production, enhances the bioactivity of broadening their potential uses. This study investigated anti-obesity peptides from bovine fermented by Lacticaseibacillus casei LBC 237, identifying 143 notably LGPV EVPMP. In silico analyses revealed that EVPMP biopeptides exhibited significant interactions target proteins, employing various molecular such as Van der Waals forces, hydrogen bonds, electrostatic interactions.
