Mycotoxins are secondary metabolites produced by fungi, known for their chemical and thermal stability, which makes them resistant to common food feed processing methods. These toxins can contaminate feed, cause a range of toxic effects upon ingestion, including mutagenic, teratogenic, carcinogenic, immunotoxic, neurotoxic, hepatotoxic, dermatotoxic effects. In recent years, the application liquid chromatography combined with tandem mass spectrometry has grown significantly mycotoxin analysis, owing its remarkable sensitivity specificity. Recent literature highlights using various systems typically integrated octadecylsilane columns employing gradient elution mobile phases consisting water, organic solvents, appropriate optional modifiers. The studies reviewed predominantly utilized electrospray ionization in positive negative modes spectrometric analysis multiple reactions monitoring mode ensure precise multi-mycotoxin quantification. Specific configurations systems, such as ultra-high performance different column types, spectrometers, triple quadrupole QTrap were mainly used. advancements underscore ongoing refinement standardization methodologies accurate efficient matrices.

This chapter delves into the dynamic field of mycotoxin research and creative approaches being used to improve food safety by addressing problems caused mycotoxigenic fungus. Toxic secondary metabolites pose a serious danger human health security. They are produced fungi including Aspergillus, Penicillium, Fusarium species. Because their prevalence in crops, particularly staple grains like peanuts, wheat, maize, much study is required comprehend methods development create practical mitigation measures. Mycotoxin production fungus influenced genetic metabolic processes that have been clarified recent advances research. Designing focused strategies stop fungal contamination agricultural contexts requires careful consideration these observations. Innovative include creation biocontrol agents, engineering crops increase resistance, environmentally friendly detoxifying techniques reduce feed. Additionally, advancements analytical Mass Spectrometry (MS), biosensors, High-Performance Liquid Chromatography (HPLC) transformed identification measurement mycotoxins variety matrices. These delicate essential for adhering regulations guaranteeing requirements fulfilled. also outlines new directions research, effects global commerce on regional distribution dynamics growth production.

Biotoxins, predominantly bacterial food toxins, mycotoxins, and marine have emerged as major threats in the fields of seafood, other foods, feeds, medicine. They potential teratogenic, mutagenic, carcinogenic effects on humans, occasionally triggering high morbidity mortality. One apparent concerns relates to increasing consumption fast resulting demand for processed without adequate consideration toxins they may contain. Therefore, developing improved methods detecting biotoxins is paramount significance. Nanozymes, a type nanomaterials exhibiting enzyme-like activity, are increasingly being recognized viable alternatives natural enzymes owing their benefits, such customizable design, controlled catalytic performance, excellent biocompatibility, superior stability. The remarkable activity nanozymes has led broad utilization development colorimetric biosensors. This potent efficient approach rapid detection, enabling creation innovative sensing methodologies through integration with sensors. In this review, recent nanozyme research application biosensing examined an emphasis characteristics performance. study particularly focuses peroxidase (POD) oxidase (OXD) superoxide dismutase (SOD), catalase (CAT) Ultimately, challenges future prospects these assays explored.
