Pediatric food allergies (FA) are a significant and growing health concern, especially in developed countries. The most recent data on FA epidemiology children, depicts dramatic picture terms of prevalence, incidence, severity (1,2). Food allergy derives from negative interaction between genetic background environmental factors, leading to breakdown immune tolerance antigens (3).During the last decades one impressive changes factors was related increased exposure ultraprocessed foods (UPF), as underlined paper by Carucci et al. included this issue. Immune health and metabolic functions are intimately connected via diet the microbiota. cells continuously exposed to a wide range of microbes microbial-derived compounds, with important mucosal systemic ramifications. Microbial fermentation dietary components in vivo generates thousands molecules, some which integral molecular circuitry that regulates immune functions. Food allergy (FA) is a growing global concern, which contributes significantly to anaphylaxis and severe allergic reactions. Despite advancements in treatments like allergen immunotherapy biologics, current approaches have notable limitations there pressing need for new therapeutic strategies. Recent research into taste receptors has unveiled their potential role FA, offering fresh perspectives understanding managing this condition. Taste receptors, particularly type 1 (TAS1Rs/T1Rs, sweet receptors) 2 (TAS2Rs/T2Rs, bitter receptors), are distributed not only the oral cavity but also various extra-oral tissues, interactions with immune responses increasingly recognized. This review highlights connections between exploring how receptor mechanisms might contribute FA pathogenesis treatment. especially TAS2Rs, include multiple subtypes varying ligand specificities, been implicated modulating could serve as targets novel therapies. Recently, the “epithelial barrier hypothesis” has been proposed as a key factor in development of allergic diseases, such food allergies. Harmful environmental factors can damage epithelial barriers, with detrimental effects on host immune response and local microbial equilibrium, resulting chronic mucosal inflammation that perpetuates dysfunction barrier. The increased permeability allows allergens to access submucosae, leading an imbalance between type 1 T-helper (Th1) 2 (Th2) inflammation, predominant Th2 is allergy development. Background/Objectives: Pediatric patients with non-IgE-mediated gastrointestinal food allergies (non-IgE-GIFAs) may experience alterations of nutritional status. This non-randomized, prospective intervention study investigated the impact dietary counseling on status in pediatric non-IgE-GIFAs. Methods: Patients both sexes aged 0–14 years newly diagnosed non-IgE-GIFAs received provided by certified dietitians immediately after diagnosis. Nutritional parameters were assessed to identify at baseline and 12 months (T12). Results: The included 100 (58% male, mean age 8.5 ± 8.8 months). Non-IgE-GIFAs phenotypes protein-induced enteropathy (FPE, 44%), enterocolitis syndrome (FPIES, 11%), allergic proctocolitis (FPIAP, 17%), motility disorders (FPIMD, 28%). At diagnosis, 1% was affected obesity (1 FPIAP), 5% overweight (2 FPE, 1 FPIAP, 2 FPIMD), 7% moderately underweight (5 FPE severely FPE), stunted (4 16% wasted (11 FPIES, 3 4% FPIMD). T12, improvements anthropometric observed, along a reduction prevalence malnutrition excess (6% diagnosis vs. 2% T12) undernutrition subtypes rate, including underweight, stunting, wasting (26% 3% p < 0.001). As RGI produziram média 57 alimentos. A apresentou forte correlação (p<0,05) com formação cluster maior variedade Sudeste menor Nordeste brasileiro.
