About one-third of the global food supply is wasted. Brewers’ spent grain (BSG), being produced in enormous amounts by brewery industry, possesses an eminence nutritional profile, yet its recycling often neglected for multiple reasons. We employed integrated metagenomics and metabolomics techniques to assess effects enzyme treatments Lactobacillus fermentation on antioxidant capacity BSG. The biotreated BSG revealed improved capability, as evidenced significantly increased (p < 0.05) radical scavenging activity flavonoid polyphenol content. Untargeted that led prominent synthesis 15 novel peptides, well higher enrichment isoflavonoid phenylpropanoid biosynthesis pathways. correlation analysis demonstrated Lactiplantibacillus plantarum exhibited strong with aucubin carbohydrate-active enzymes, namely, glycoside hydrolases 25, glycosyl transferases 5, carbohydrate esterases 9. fermented has potential applications industry a culture medium, functional component human consumption, bioactive feed ingredient animals.

Abstract Oats ( Avena sativa L.) are rich in nutrients and bioactive compounds, serving as a roughage source for ruminants. This study investigated the impact of lactic acid bacteria (LAB), cellulase (M), their combinations (LM) on fermentation quality metabolic compounds oat silage. Results demonstrated that all additive treatments significantly increased content compared to control group P < 0.05), with treatment exhibiting lowest pH value 0.05). Analysis antioxidant activity metabolites silage over 60 days revealed 374 differential 113 up-regulated 261 down-regulated, groups showing higher than raw materials Although no significant differences were observed among various this experiment, notable changes pathways identified. Furthermore, two (carboxylic acids derivatives benzene substituted derivatives) identified through non-targeted metabolomics technology, both which strongly associated finding provides theoretical basis efficient use animal husbandry.
