The consumption of ultra-processed foods (UPFs) has surged globally, raising significant public health concerns due to their associations with a range adverse outcomes. This review aims elucidate potential impacts UPF intake and underscore the importance considering diet quality when interpreting study findings. group, as classified by Nova system based on extent industrial processing, contains numerous individual food items wide spectrum nutrient profiles, well differential reflected effects. given may misalign processing levels so that can be nutritious healthful whereas non-UPF low excess which lead consequences. current argues it is critical focus nutritional content role within overall dietary pattern rather than only level processing. Further research should dissect effects investigate ingredients render categorization, understand roles metabolomics gut microbiome in mediating modulating consider environmental sustainability studies. Emphasizing nutrient-dense patterns shall remain pivotal strategy for promoting preventing chronic diseases.

Abstract BACKGROUND The extensive use of additives in ultra‐processed foods presents considerable health concerns. In light the growing consumer demand for clean labels, a prominent trend is development multifunctional food that are both natural and beneficial to health. Surfactin, compound produced by Bacillus subtilis , features hydrophilic hydrophobic groups noted its safety, emulsifying antimicrobial properties. This holds significant potential as additive flour‐based products. present study aimed evaluate effects surfactin on physicochemical properties dough quality steamed bread, well investigate underlying mechanisms. RESULTS results showed addition significantly improved rheological properties, increased elasticity viscosity, extension resistance disulfide bonding content ( P < 0.05), subsequently stabilizing gluten network structure. With 0.3% addition, digestibility bread reduced. After storing 7 days, inhibited water migration, reduced transfer from bound free water, delayed starch recrystallization, retrogradation markedly extended shelf life bread. CONCLUSION through structure improving storage presenting it promising natural, flour product innovation. © 2024 Society Chemical Industry.

Microalgae are currently considered an attractive source of highly valuable metabolites potentially exploitable as anticancer agents, nutraceuticals and cosmeceuticals for bioenergy purposes. Their ease culturing their high growth rates further promote use raw material the production specialty products. In present paper, we focused our attention on specific glycerol-based lipid compounds, monoacylglycerols (MAGs), which displayed in previous studies a selective cytotoxic activity against haematological U-937 colon HCT-116 cancer cell lines. Here, performed quali/quantitative analysis MAGs total fatty acids (FAs) along with profiling main classes panel 12 microalgal species, including diatoms dinoflagellates. Our results highlight inter- intraspecific variability MAG profile selected strains. Among them, Skeletonema marinoi (strain FE7) has emerged most promising possible biotechnological MAGs.

Abstract A crucial early-life developmental phase regulates microbiome settling while establishing critical and long-lasting immune metabolic processes. During this period, the influence of select components maternal diet on offspring microbiota health remains largely unknown. To investigate potential transgenerational impact exposure to microbiota-disrupting factors, dams were subjected prior breeding dietary emulsifiers, known directly perturb microbiota. Such induced alterations in which associated with susceptibility diet-induced obesity intestinal inflammation. These detrimental effects entirely prevented by normalization through cross-fostering procedures. Mechanistically, emulsifier induces strong offspring’s impairment goblet cells-mediated host-microbiota communication is central driving observed deleterious effects. conclude, study underscores role played intake agents next generation’s microbiota, long lasting consequences for health.
