Beech mushrooms (Hypsizygus marmoreus) are edible commercially used in South Korea. They can be classified into white and brown according to their pigmentation. This study analyzed the metabolites biological activities of these mushrooms. Specifically, 42 (37 volatiles, two phenolics, three carbohydrates) were quantified beech mushrooms, 47 (42 detected The major volatiles hexanal, pentanal, 1-hexanol, 1-pentanol. Brown contained higher levels hexanal (64%) than (35%), whereas had pentanal (11%) 1-pentanol (3%). Most more abundant Furthermore, a phenolic content Biological assays revealed that both types mushroom demonstrated anti-microbial against bacterial yeast pathogens weak DPPH scavenging activity. extracts from (50 μg/mL) also exhibited strong anti-inflammatory properties. showed antioxidant, anti-microbial, properties extracts. reported differences phenotype, taste, odor consistent with metabolite between which have high nutritional biofunctional values.
