Abstract In the present study, oxidative stability and antioxidant activity of seed oils were investigated in three Iranian pomegranate cultivars, Shirin Khafr, Torsh Sabz, Rabab, along with sesame ( Sesamum indicume L. cv Dezful) oil. Punicic acid was primary fatty oils, contents ranging from 75.5 to 80.9% (w/w). The tocopherol levels ranged 1439 2053 mg/kg, whereas phenolics 130 199.3 respectively. Abstract This study aimed to stabilize and mask the bitterness of peptides obtained from enzymatic hydrolysis coconut‐meal protein with maltodextrin (MD) maltodextrin‐pectin (MD‐P) as carriers via spray‐drying. Essential (~35%), hydrophobic (~32%), antioxidant (~15%), bitter (~45%) amino acids comprised a significant fraction peptide composition (with degree 33%). The results indicated that peptide's production efficiency, physical functional properties, hygroscopicity improved after Morphological features free (fragile porous structures), spray‐dried MD (wrinkled indented MD‐P combination (relatively spherical particles smooth surfaces) were influenced by process type feed composition.
