Climate change modifies the base climate of wine regions and, with it, structure their traditional types production, imposing measures to adapt, mitigate, or capitalize on newly emerging conditions. In order assess impact and establish appropriate adaptation for each region, regional local studies are needed, which allow knowledge current profile. The aim this research was identify changes that appeared as an effect in initial profile production Bordeaux (France), Loire Valley Rhine-Main-Nahe (Germany), La Rioja (Spain) Cotnari (Romania) regions, also suitability Sussex area from UK. study uses multi-year averages 1951–1990 1991–2010 time periods reference bioclimatic indices viticulture, namely Average Temperature Growing Season (AvGST), Huglin Index (HI), Oenoclimatic Aptitude (IAOe). results reveal significant studied regions: led appearance conditions cultivation Mediterranean varieties Grenache, Syrah, Carignan; cool Cotnari, producers white wines, has become suitable Pinot noir Cabernet franc varieties, implicitly red wines; all classes viticulture shifted higher altitude, is case where, recent period, grapevine can be grown up 922.9 m asl, by 206.2 compared period; low one even two new grape growing appeared. shifts revealed generate solid conclusions regarding climatic viticultural potential geographical areas, namely: context change, altitude region a major influence evolution potential; topography allows better change; low-elevation more vulnerable changes, especially further south they located; appear wine.

Theoretical representation of wine is important for producers, with implications in a technical context. Understanding the correlation between characteristics and terroir involves emphasizing typicality linking it to sensory interpretation. Within this research, adaptable nature indigenous red grape variety ‘Agiorgtiko’, well-known its role producing PDO wines, was examined both chemically sensorially. Wine PDOs are based on their place origin product specifications. A total ten vineyards located dry region were carefully chosen vinify grapes at three distinct elevation tiers (low 300-600 m, medium 600-900 high 900-1250 m) over two consecutive vintages (2019-2020). Classical oenological analyses performed International Organisation Vine analytical methods. Phenolic content color parameters investigated by spectrophotometric methods volatile compounds aroma, such as esters, higher alcohols acids, analyzed GC/MS. Descriptive analysis carried out trained panel all produced wines. The findings revealed variations among that primarily influenced provenance, which turn shaped unique compositional characteristics. Multivariate analytes determined proved sub-zone altitudes clearly separated from other zones. Notably, presence some wines indeed impacted origin. In essence, research illustrated how attributes ‘Agiorgitiko’ could be changed diverse elements within designated Nemea region.
