Analog rice made from local flour and seaweed underwent proximate fiber content tests, followed by clinical trials involving prediabetic diabetic sufferers over 42 days. The aim of this study was to determine the effect consuming seaweed-based analogues on Superoxide Dismutase (SOD) levels in sufferers. Initial assessments were conducted days 21 as final evaluation. involved 40 respondents (both patients), with 20 regular analog rice. Both groups had same vegetables side dishes. Additionally, chemical product tested. SOD activity measured using a colorimetric assay method. results showed that consumption significantly reduced blood (initial value 0.59 ± 0.12 0.41 0.16), whereas increased 0.71 0.20 0.87 0.32). composition included 61.57 0.49% water, 13.22 0.04% protein, 0.11 0.01% ash, 0.74 fat, 34.38 0.40% carbohydrates, 10.17 0.15% fiber. Ultimately, research opens new avenue, suggesting artificial can serve not only primary energy source but also functional food potential antidiabetic properties

Evidence suggests that COVID-19 infection increases the risk of type 1 (T1D) and 2 diabetes (T2D). Diabetes, in turn, susceptibility contributes to increased morbidity mortality. Oxidative stress (OxS) has emerged as a common factor driving pathogenesis caused by severe acute respiratory syndrome coronavirus (SARS-CoV-2). The mechanistic links between OxS, T2D, have primarily been studied adults will be summarized this review.
