In order to explore the effect of Wickerhamomyces on production flavor compounds in Xiaoqu Baijiu, this study examined correlation between fungal communities and ester compounds. It was hypothesized that contributes aroma Xiaoqu. Enhanced fermentation methods were used validate role Baijiu brewing.
