It aims to offer an alternative product the food industry for increasing demands of healthy nutrition with production yogurt containing bee pollen. Probiotic prepared different levels pollen (0.5%, 1.5%, 3% and 6%) were evaluated antimicrobial properties, viability S. thermophilus, L. bulgaricus, acidophilus, Bifidobacterium spp. during 14 days refrigerated storage, resistance in vitro gastrointestinal conditions. Yogurt samples showed activity against monocytogenes, Typhimurium, E. coli, coli O157:H7, aureus at high level cell concentration (108 CFU/mL). The decreased digestion model depending on content bacterial species as application time increased. simulated gastric intestinal juice tolerance bacteria was strain dependent pH-dependent. addition enhanced survival acidophilus both juices.

Psychobiotics are live microorganisms that, when administered in adequate amounts, confer mental health benefits to the host. Several clinical studies have demonstrated significant from psychobiotic administration, making them an emerging topic food science. The global increase in prevalence of (pre-)diabetes demands immediate intervention strategies. In our earlier work, we demonstrated vitro antidiabetic potential a fermented beetroot product (PN39). Here, examined the impact PN39 on glucose tolerance and gut microbiota C57BL/6J male mice prediabetic (PD) subjects' stool microbiota. mice, high-fat diet (HFD) consumption for 9 weeks resulted hyperglycemia impaired (GT) while concomitant HFD (PN39+HFD) prevented GT impairment. Meanwhile, feeding with 5 to induce PD later administering them 4 (PD + PN39) neither improved fasting blood nor GT. Relative control groups, both humans were characterized by decreased Clostridia UCG-014 Lactobacilli as well significantly altered microbial carbohydrate metabolism. Feeding together preserved Lactobacilli, increased short chain fatty acid production relative fed only. We identified strains of lactic acid bacteria from fermented potherb mustard that showed excellent fermentation properties. The goal was to identify superior starter cultures would optimize the traditional process, reduce duration, and improve quality pickled mustard. Four were screened: Weissella cibaria (LAB1, LAB3) Leuconostoc mesenteroides (LAB2, LAB4). Then, after in vitro tests tolerance low pH salt levels as well production ability, nitrite degradation antibacterial properties, antioxidant activity, LAB1 LAB2 selected best strains.
