DGLVs (spinach, broccoli), legumes (soybean, mung bean, kidney bean), and cereal (corn) are well recognized for human health benefits due to the presence of natural folate (vitamin B9) with essential micronutrients. This review aims to streamline the approach assessing most used valorization methods for fruit and vegetable waste (FVW) that are eco-friendly, cost-effective, sustainable within a circular economy framework. Green processing technologies extraction of bioactive compounds from FVW, their applications, technico-economical assessment FVW’ biorefinery support highlighted. Important value-added products generated by FVW include compounds, pectin, protein isolates, such as soy, natural pigments anthocyanins, quinones, carotenoids, betalains, chlorophyll. At this time, prospects using have increased in food supplements, edible packaging, agriculture, energy, water purification fields. ABSTRACT Research on soybean nutrition is crucial for Chinese agriculture and public health, as sprouting enhances its nutritional value. However, the relationships between grain quality varieties are not yet fully understood. In this study, of 49 cultivars from 15 different origins was evaluated through multiple correlation analysis. Differences were observed based their geographical origin, with Shandong Chongwen showing higher calcium isoflavone levels than others. A found protein content daidzein (0.561***), well genistein (0.597***). Additionally, shown to improve nutrition. Among six high‐nutrient varieties, increased protein, minerals, isoflavones during germination. Phytic acid oligosaccharide decreased by 64.7% 94.5%, respectively, while saponin 106.0%, indicating changes in antinutritional factors. The experiment establishes a clear relationship nutrients tested variables, highlighting impact germination nutrient content.

Protein is a fundamental macronutrient in the human diet. It supplies our organisms with essential amino acids, which are needed for growth and maintenance of cells tissues. Conventional protein sources, despite their complete acid profiles excellent digestibility, have proven negative impact on environment. Furthermore, production poses many ethical challenges. This review aims to present nutritional, more ethical, environmentally friendly alternatives that could serve as potential sources population. The available literature alternative has been analyzed. Based research conducted, various products identified described, including plant-based such soybeans, peas, faba beans, lupins, hemp seeds; aquatic algae, microalgae, water lentils; well insect-based microbial cell-cultured meat. Sweetness in food delivers a delightful sensory experience, underscoring the crucial role of sweeteners industry. However, widespread use has sparked health concerns. This underscores importance developing and screening natural, health-conscious sweeteners. Our study represents groundbreaking venture into discovery such derived from egg soy proteins. Employing virtual hydrolysis as novel technique, our research entailed comprehensive process that evaluated biological activity, solubility, toxicity compounds. We harnessed cutting-edge machine learning methodologies, specifically latest graph neural network models, for predicting sweetness molecules. Subsequent refinements were made through molecular docking screenings dynamics simulations. meticulous approach culminated identification three promising sweet peptides: DCY(Asp-Cys-Tyr), GGR(Gly-Gly-Arg), IGR(Ile-Gly-Arg). Their binding affinity with T1R2/T1R3 was lower than -15 kcal/mol. Using an electronic tongue, we verified taste profiles these peptides, IGR emerging most favorable terms value 19.29 bitterness 1.71. not only reveals potential natural peptides healthier alternatives to traditional applications but also demonstrates successful synergy computational predictions experimental validations realm flavor science.

Abstract Oral cancer is a disease with high mortality and rising incidence worldwide. Although fragmentary literature on the anti‐oral effects of plant products has been published, comprehensive analysis lacking. In this work, critical evaluation oral preventative or therapeutic dietary plants was conducted. An exhaustive available data supports that numerous exert anticancer effects, including suppression cell proliferation, viability, autophagy, angiogenesis, invasion, metastasis while promoting cycle arrest apoptosis. Plant extracts target several cellular mechanisms, such as reversal epithelial‐to‐mesenchymal transition promotion oxidative stress mitochondrial membrane dysfunction by modulation various signaling pathways. These agents were also found to regulate growth pathways action extracellular signal‐regulated kinase mitogen‐activated protein kinase, inflammation via cyclooxygenase (COX)‐1, COX‐2, nuclear factor‐κB p65, through influence cadherins matrix metalloproteinases. vivo studies support these findings demonstrate decrease in tumor burden, incidence, hyperplastic dysplastic changes. Clinical showed decreased risk. However, high‐quality should be conducted establish clinical efficacy plants.
