Innovation is essential for addressing the current challenges of wine sector and ensuring its sustainable future. Law plays a pivotal role in fostering disseminating innovation. Abstract Defence priming of plants with natural products is extensively studied in the agricultural field to reduce use synthetic and copper-based pesticides. Previous studies have shown that Oregano essential oil vapour (OEOV) an effective agent against downy mildew (DM) grapevine (Vitis vinifera L. cv. Chasselas), activating different transcriptomic regulated defence mechanisms. In present study, we complement data metabolomic insights, confirming some previous regulating patterns highlighting new mechanisms underlying OEOV-induced resistance. A significant modulation phenylpropanoid pathway was noted. Volatile thiol 3-mercaptohexan-1-ol (3MH) and particularly 4-mercapto-4-methylpentan-2-one (4MMP) are highly potent flavour compounds in hops. For the determination, a simple robust stable isotope dilution LC-MS/MS method was developed applied to 32 hop varieties worldwide from harvest years 2019 2020. Limit of detection, precision, recovery were 0.15 μg/kg, 10%, 97-108%, respectively. Levels 3MH 4MMP ranged 1.9 79.2 μg/kg undetectable 37.1 Citra, Mosaic, Strata rich both thiols.
