Limiting and/or slowing down the starch digestion process and consequently release of glucose can be an important strategy for prevention type 2 diabetes (T2D). The aim current in vitro study was to assess anti-diabetic antioxidant potential red radish leaves Carmen, Jutrzenka, Saxa, Warta cultivars. In context activity, effect on potato free binding, as well inhibitory effects leaf extracts against α-amylase α-glucosidase non-enzymatic glycation (AGEs) were determined. basic chemical composition, quantitative composition phenolic compounds, activity also estimated. This showed that all inhibited breakdown their ability bind glucose. correlated with content hydroxycinnamic acids, protein dietary fiber while flavones probably responsible binding. Leaf formation AGEs but practically inactive towards α-amylase. Inhibition related proanthocyanidins inhibition flavonols. These results point leaves, especially Jutrzenka cultivars, a natural remedy treating T2D.
