The objective of this study was to examine the lignan content and antioxidant activity eight Korean sesame seed varieties. We analyzed using two different techniques: (1) liquid chromatography coupled with tandem mass spectrometry, (2) high-performance ultraviolet detection. identified that in seeds, sesamolin occurs at highest concentration (ranging between 4.427 mg/g 10.258 mg/g). Further, variety Haniall 5.220 12.684 Ansan showed greatest relevant tests, exhibiting superior scavenging activities toward 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) 2,2-diphenyl-1-picrylhydrazyl radicals, along a higher total polyphenol concentration. In addition, we found is strongly positively correlated its radical activity, especially against ABTS radicals. These findings highlight varieties can be potentially used as functional foods activities.

Abstract Black sesame seeds, known for their rich flavor and medicinal properties, hold significant potential as natural therapeutics against prostate cancer, a major health challenge men today. This study explores the traditional processing technique of nine cycles steaming drying, which enhances bioactive these seeds. The impact this on antioxidant anti-prostate cancer properties black seeds was systematically investigated, focusing key lignans, sesamin sesamolin. HPLC utilized to analyze content ratios sesamolin, while DPPH FRAP assays evaluated capabilities, MTT assessed anti-cancer DU145 cells. Findings reveal that three drying significantly enhance activities DU145, achieving peak concentrations sesamolin 21.583% 14.991%, respectively, with an optimal ratio 1.4397:1. superior activity sample is attributed conditions maximize stability extraction compounds, particularly non-lignan antioxidants, minimizing degradation; likely enhanced by interplay between various phytochemicals effects thermal cellular structure. Processed consistently outperformed raw seeds—except those subjected single cycle. Additionally, molecular docking analyses revealed compelling interactions proteins implicated in (FYN, ITGB3, PDGFRA, PDGFRB, PIK3R1), demonstrating higher LibDock scores than standard drug 5-fluorouracil. research highlights exceptional through three-steaming three-drying method, emphasizing importance developing future therapeutics.

Black oilseed crops are rich in diverse phenolic compounds and have excellent antioxidant activities, as reported traditional Chinese medicine. Testa (seed coat) peeled seeds (cotyledon, embryo, other structures) the seed's crucial components, contributing to variation phytonutrient, phenol content, bioactive component, protective pharmacological effects. However, comprehensive comparative information on total phenol, flavonoid, antioxidant, metabolic profiles black seed testa sesame, soybean, peanut, rapeseed is rare. Here, we investigated profiles, contents, activities of four crop testas seeds. This study revealed that has higher than A 1847 metabolites were identified across all samples categorized into 17 major classes: flavonoids (20.02%), acids (15.15%), lipids (11.47%), amino derivatives (9.36%), alkaloids (7.47%), organic (5.79%), terpenoids (5.68%), lignans (5.57%), saccharides (4.27%), nucleotides (4.17%) among top ten. Primary class such acids, saccharides, vitamins testa, signifying role energy reservoirs nutritive potential. flavonoids, coumarins, chromones, lignans, terpenoids, tannins, abundant testa. Interestingly, diversity content secondary more each crop, explaining their potential for bioactivity, activity, The bioactivity may be associated with phytochemical composition alkaloids, lipids, saccharides. Therefore, according our results, offer nutritional value, medicinal properties. provides insights variations composition, activity further application oilseeds food products maximize benefits.

Rising health concerns regarding chronic diseases call for exploring natural sources of antioxidants and factors that influence their activity. This study evaluated the diversity 112 sesame germplasms from Africa Asia based on ten agronomic traits (seven quantitative three qualitative), two antioxidant activities (ABTS DPPH radical scavenging activities), content one metabolite (TPC). TPC, DPPH, ABTS were in ranges 4.98–87.88 µg GAE/mg DE, 3.97–46.23 AAE/mg 3.42–176.01 TE/mg respectively. Statistical analyses revealed significant variations traits, among (p < 0.05). Furthermore, individual interaction effects seed color continent origin levels ABTS, analyzed, correlation was further evaluated. Diversity significantly associated with most 0.05) but not origin. Principal component analysis five as discriminant traits. In general, six accessions high TPC (IT194356, IT170094, IT29971, IT185998, IT104246, IT169623) well important identified and, hence, could be used developing improved varieties.
