In vitro and molecular docking evaluation of black sesame seeds' anti-prostate cancer and antioxidant activity processed by nine steaming nine drying

Abstract
Black
sesame
seeds,
known
for
their
rich
flavor
and
medicinal
properties,
hold
significant
potential
as
natural
therapeutics
against
prostate
cancer,
a
major
health
challenge
men
today.
This
study
explores
the
traditional
processing
technique
of
nine
cycles
steaming
drying,
which
enhances
bioactive
these
seeds.
The
impact
this
on
antioxidant
anti-prostate
cancer
properties
black
seeds
was
systematically
investigated,
focusing
key
lignans,
sesamin
sesamolin.
HPLC
utilized
to
analyze
content
ratios
sesamolin,
while
DPPH
FRAP
assays
evaluated
capabilities,
MTT
assessed
anti-cancer
DU145
cells.
Findings
reveal
that
three
drying
significantly
enhance
activities
DU145,
achieving
peak
concentrations
sesamolin
21.583%
14.991%,
respectively,
with
an
optimal
ratio
1.4397:1.
superior
activity
sample
is
attributed

stability
extraction
compounds,
particularly
non-lignan
antioxidants,
minimizing
degradation;

enhanced

interplay

molecular
docking

demonstrating
higher
LibDock
scores
than
standard
drug
5-fluorouracil.
