Detection of Ochratoxin A in Tissues of Wild Boars (Sus scrofa) from Southern Italy

Ochratoxin
A
(OTA)
is
a
secondary
metabolite
produced
by
fungi
of
the
genera
Aspergillus
and
Penicillium,
known
to
contaminate
various
food
substrates.
Its
toxic
effects
include
direct
nephrotoxicity,
as
well
observed
teratogenic,
immunogenic,
carcinogenic
effects.
Climate
change
may
contribute
increased
humidity
temperature,
favouring
fungal
growth
and,
consequently,
OTA
spreading.
Recent
increases
in
wild
boar
populations,
along
with
their
omnivorous
nature
varied
diet,
define
them
environmental
bioindicators
for
contaminants
like
mycotoxins.
This
study
aimed
assess
concentrations
kidney,
liver,
muscle
tissue
samples
from
74
boars
that
were
hunted
different
areas
Avellino,
Campania
region,
between
2021
2022.
Tissue
underwent
extraction,
purification,
analysis
using
high-performance
liquid
chromatography
(HPLC)
coupled
fluorescence
detector.
Results
revealed
presence
35.1%
tested
boars.
The
highest
concentration
was
kidney
less
muscle,
indicating
this
mycotoxin
surrounding
environment.
Consequently,
there
need
formulate
rules
edible
wildlife
products.
These
findings
emphasize
significant
risk
contamination
tissues,
suggesting
potential
reliable
markers
prevalence
toxicological
concern
human
health.

This
review
paper
analyses
the
existing
regulations
related
to
these
contaminants,
their
impact
on
health
risk
assessment
associated
with
consumption.
Sources
of
contamination
are
discussed,
including
influence
climatic
conditions
emerging
risks
occurrence
contaminants
in
as
well
transfer
all
during
distillation
process.
Furthermore,
analytical
detection
methods
strategic
measures
reduce
consumer
exposure
reviewed.
The
results
highlight
need
for
continued
research,
improvement
control
adaptation
regulatory
standards

Cheese
is

globally
consumed
dairy
product,
with
Europe
leading
the
world
in
its
consumption.
Italy,
as
third-largest
cheese
producer
within
European
Union,
plays
crucial
role
sector,
particularly
through
production
of
Protected
Designation
Origin
(P.D.O.)
cheeses,
including
Grana
Padano
and
Parmigiano
Reggiano.
These
hard
cheeses
are
widely
utilized
pre-packaged
grated
products,
owing
to
their
broad
appeal
recognized
quality.
While
mold
common
often
necessary
component
for
development
flavor
texture,
fungal
growth
can
also
detrimentally
affect
quality
cheese,
potentially
causing
economic
losses
posing
food
safety
risks.
Some
molds
capable
producing
mycotoxins,
such
ochratoxin
A
(OTA),
toxic
compound
that
has
been
identified
cheese.
This
study
aims
quantitatively
assess
prevalence
OTA
contamination
various
products
using
high-performance
liquid
chromatography
method
while
exploring
potential
implications
safety.
The
results
revealed
high
incidence
OTA,
97.6%
samples
tested
positive
contamination,
ranging
from
below
limit
detection
(<LOD)
19.15
ng
g−1.
Among
tested,
Reggiano
brand
exhibited
significantly
highest
average
level
(5.06
±
0.66
g−1),
followed
by
pecorino
(2.25
0.31
mixed
(2.15
0.18
(1.53
0.21
g−1).
Given
widespread
consumption
these
findings
underscore
importance
continuous
monitoring
risk
assessment
varieties,

health
risks
associated
exposure.
