Jackfruit residues represent 70% of the total by-products generated from processing fruit. The seeds, which are composed proteins, fibers, and starch, widely used in human nutrition; however, its potential animal nutrition should be further investigated. Thus, objective was to study protein enrichment jackfruit seeds by semi-solid fermentation using Saccharomyces cerevisiae applying an experimental design verify effects yeast concentration (1, 3, 5%) process temperature (30, 35, 40 °C) on increase. HB2-2) as potent AFB1-degrading microorganism, using morphological observation, biochemical profiling, 16S rRNA sequence analysis. House crickets (Acheta domesticus) were processed into a seasoning paste, the so-called fermented cricket paste (FCP), by mimicking production process of Thai shrimp (Kapi). Whole house ground with solar salt (crickets to ratio = 10:1 w/w), sun-dried ∼50% moisture content and at 30 °C for 4 weeks using Kapi (5% w/w) as starter culture. Results showed that salting drying steps might contribute greatly eradicating undesirable microorganisms lowering Aw from 0.9 0.7. The changes in physicochemical properties during FCP preparation could be attributed activity lactic acid bacteria, which predominant (5.66 log CFU/g DW).
