Glucosinolates (GSLs) are sulfur-containing compounds predominantly found in cruciferous vegetables such as broccoli, kale, and Brussels sprouts, recognized for their health-promoting properties. Upon consumption, GSLs undergo hydrolysis by the enzyme myrosinase, resulting bioactive like isothiocyanates specific indole glucosinolate degradation products, indole-3-carbinol (I3C) 3,3′-diindolylmethane (DIM), which contribute to a range of health benefits, including anti-cancer, anti-inflammatory, cardioprotective effects. This review explores structure, metabolism, bioavailability GSLs. Recent evidence supports protective role chronic diseases, with mechanisms modulation oxidative stress, inflammation, detoxification pathways. Human health is significantly influenced by the quality of vegetables included in diet. Soilless cultivation methods have potential to enhance and standardize levels secondary metabolites or specific bioactive compounds plants, even when utilizing LED lighting. In recent years, tailored foods, enriched with important microelements, are growing popularity. The present research was conducted explore quantitative qualitative aspects dill ( Anethum graveolens L.), grown either indoor a greenhouse harvested during microgreen stage. Seeds were primed 1.5 3 mg L −1 selenium (Se). Untreated dry hydro-primed seeds used as control positive groups, respectively.
