Deoxynivalenol (DON) is a foodborne mycotoxin produced by Fusarium molds that commonly infect cereal grains. It potent protein synthesis inhibitor can significantly impact humans’ gastrointestinal, immune, and nervous systems alter the microbiome landscape. Low-dose, chronic exposure to DON has been found stimulate immune system, inhibit synthesis, cause appetite suppression, potentially leading growth failure in children. At higher doses, shown nausea, vomiting, abdominal pain, headache, diarrhea, gastroenteritis, malabsorption of nutrients, intestinal hemorrhaging, dizziness, fever. A provisional maximum tolerable daily intake (PMTDI) limit 1 µg/kg/body weight established protect humans, underscoring potential health risks associated with intake. While adverse effects dietary have established, healthcare communities not adequately investigated or addressed this threat child health, possibly due assumption current regulatory limits public appropriately. This integrative review whether rates infants children regularly exceed PMTDI limits, placing them at risk negative effects. On global scale, routine contamination grains, bakery products, pasta, human milk could lead levels above limits. Furthermore, evidence suggests other food commodities, such as soy, coffee, tea, dried spices, nuts, certain seed oils, animal milk, various water reservoirs, be intermittently contaminated, further amplifying scope issue. Better mitigation strategies measures are needed safeguard vulnerable youth from harmful toxicant.

A comprehensive overview of food mycotoxins, their toxicity, and contemporary detoxification techniques is given in this article. Mycotoxins, which are harmful secondary metabolites generated by a variety fungi, including Fusarium, Aspergillus, Penicillium, provide serious health concerns to humans animals. These include hepatotoxicity, neurotoxicity, carcinogenicity. Mycotoxins commonly found basic products, as evidenced recent studies, raising worries about public safety. The article discusses detection such enzyme-linked immunosorbent assays (ELISA), quick strip tests. Moreover, the use various control systems associated with mycotoxinis highlighted. In addition, novel strategies nanotechnology, plant extracts, omics studies were also discussed. When taken whole, analysis helps clarify pressing need for efficient management monitoring prevent mycotoxin contamination chain.

Mycotoxins are secondary metabolites produced by fungi, known for their chemical and thermal stability, which makes them resistant to common food feed processing methods. These toxins can contaminate feed, cause a range of toxic effects upon ingestion, including mutagenic, teratogenic, carcinogenic, immunotoxic, neurotoxic, hepatotoxic, dermatotoxic effects. In recent years, the application liquid chromatography combined with tandem mass spectrometry has grown significantly mycotoxin analysis, owing its remarkable sensitivity specificity. Recent literature highlights using various systems typically integrated octadecylsilane columns employing gradient elution mobile phases consisting water, organic solvents, appropriate optional modifiers. The studies reviewed predominantly utilized electrospray ionization in positive negative modes spectrometric analysis multiple reactions monitoring mode ensure precise multi-mycotoxin quantification. Specific configurations systems, such as ultra-high performance different column types, spectrometers, triple quadrupole QTrap were mainly used. advancements underscore ongoing refinement standardization methodologies accurate efficient matrices.
