Fruits and vegetables are sources of natural nutraceuticals. They contain a variety bioactive compounds such as vitamins, minerals, dietary fibers other phytochemicals that contribute to their health-promoting properties disease prevention. A wide fruits should be eaten ensure an individual’s diet includes combination phytonutraceuticals obtain all health benefits. In this study, the antimicrobial effect of Citrus limon peel extract against Listeria monocytogenes was analyzed in silico, tested vitro, and validated fermented cow milk during cold storage. Dyslipidemia is a critical risk factor for atherosclerosis and cardiovascular/cerebrovascular events, necessitating effective long-term management. However, conventional lipid-lowering drugs such as statins fibrates are limited by adverse effects, including hepatotoxicity myopathy, which restrict their prolonged use. Traditional Chinese medicine (TCM) natural health products offer potential alternatives with multi-target mechanisms improved safety profiles. Tangerine Peel Enzyme Drink (CPJS), fermented product derived from tangerine peel, has demonstrated lipid-modulating properties. This study aimed to evaluate the efficacy of CPJS in improving dyslipidemia explore its underlying metabolic microbiological mechanisms. A randomized, double-blind, parallel-controlled clinical trial was conducted 72 participants (55 completers). Participants were divided into control groups, receiving an 8-week intervention. Primary outcomes included changes body weight serum triglycerides (TG), while assessed via liver/kidney function, creatine kinase, blood, urine tests. Serum metabolomics (93 differential metabolites identified) intestinal microbiota analysis performed elucidate pathways microbial shifts. In this study, we analyzed the quality characteristics of short-term fermented cream cheese with added Citrus junos peel (CP). Samples were classified as CP1, CP2, and CP3 based on amount CP added. The analysis included pH, viscosity, CIE color, electronic nose, tongue, sensory evaluation. pH samples significantly decreased increasing levels (p < 0.05).
