The orthogonal array design method was used to optimize ultrasonic-assisted extraction of resveratrol from peanut sprouts. results showed that the highest yield using could be up 1.1%. optimal conditions were liquid solid ratio 30:1 (mL/g) and ethanol concentration 80% (v/v) as solvent for 40 min at temperature 70 °C. AB-8 macroporous adsorption resin purify crude extract content increased 47.5% after one treatment run. parameters initial concentrations in sample solution 2 mg/mL, a pH 5.0, flow rate mL/min, 25 desorption 60% 1 mL/min. chemical composition sprout’s investigated via HPLC, predominant constituents found protocatechuic acid, catechins, caffeic epicatechuic resveratrol, rutin. antioxidant activities measured following different analytical methods: reducing power, 2,2-diphenyl-1-picrylhdrazyl (DPPH), hydroxyl radical-scavenger activity, superoxide β-carotene bleaching test, scavenging nitrite test. indicated sprouts have significant can source potential antioxidant. And has valuable application new type resource. finding this study provide some theoretical reference comprehensive utilization resources development health foods.
