The nature of the use basic concepts on a specific issue in scientific journals affects overall quality relevant information. relevance issues related to food security and sustainable development stimulates study various products, particular, fat, oil products. purpose this paper is describing categories fat products international literature. authors analyzed three concepts: butter, margarine, spread. primary literature search was carried out Scopus bibliographic database, selected sources were assessed semi-quantitatively (in points) for conceptual unambiguity. found that articles demonstrate thematic geographical diversity. Thematically, they focus key issues: product properties, their production technology, consumers markets, with first group numerically prevailing. Conceptual unambiguity moderate average extremely low number sources. When comparing groups articles, it consider significantly lower. Clear patterns distribution have not been established. Basic are often used arbitrarily, mixed up, which reduces information, disorients representatives sector complicates research innovation activities. Russian specialists should carefully verify information from contribute improving its quality.
