Omega-3 fatty acids (O3FA) are essential nutrients that play a crucial role in maintaining human and animal health. They known for their numerous health claims, including cardiovascular benefits, contributing to both the prevention treatment of immunological, neurological, reproductive, complications, supporting overall well-being. Fish, especially oily fish, comprise rich source O3FA. In fish industry, significant amounts by-products waste generated during processing which often discarded or used lower-value applications. However, there is recognition potential value extracting O3FA from these by-products. Various extraction techniques can be used, but goal efficiently extract concentrate while minimizing loss nutritional value. To prevent oxidation maintain stability O3FA, natural antioxidants added.
