The many possible treatments and continuously changing consumer trends present a challenge when selecting antimicrobial interventions during pork processing. Thirty-five potential antimicrobials were screened at commercial working concentrations by individually adding them to miniaturized (69 cm3) disks of loin ends, followed inoculation with Salmonella Typhimurium ATCC 19585. Listeria monocytogenes is a common foodborne pathogen causing severe listeriosis, with mortality rate of 20-30%. This spreads through biofilm formation in the food industry. Antimicrobial peptides are widely used preservation to combat harmful pathogens. Thanatin, 21-amino acid peptide from Podisus maculiventris, combats various pathogens effectively. study aimed evaluate antimicrobial efficacy thanatin against L. ATCC 19115. The minimum inhibitory concentration (MIC) was determined be 17 μg/mL. Analysis using scanning electron microscope (SEM) confirmed its antibacterial efficacy. Thanatin treatment inhibited swimming motility, formation, auto-aggregation, cytotoxicity, hemolysin activity, adhesion, and host cell invasion by monocytogenes. Concentrations ranging 1/16MIC (27%) MIC (92%) effectively prevented existing biofilms experienced significant reduction (9.41% 80.66%) after treatment. Moreover, exhibited cytotoxic effects on Caco-2 cancer cells (IC50=27.04 μg/mL) decreased hemolytic activity (2.66% 7.33%). Additionally, suppressed expression virulence genes monocytogenes, decreasing pathogenicity. In summary, exhibits beneficial effects, suggesting potential as natural bacteriostatic agent for further research practical implementation.

Lemongrass is a medicinal plant that produces essential oil with variety of therapeutic properties. Although lemongrass (LGEO) promising in clinical applications, the existing knowledge on efficacy and safety LGEO remains limited. This scoping review aimed to identify, summarize, synthesize literature related applications provide an overview its potential benefits for patients. Three databases (PubMed, Web Science, Scopus) were used following PRISMA-ScR guidelines find articles published between 1 January 2013, November 2022. A total 671 records identified 8 included this review. The majority patients received oromucosal topical treatment. results studies suggest might be useful tool treatment periodontitis, gingivitis oral malodour, similar chlorhexidine (anti-gingivitis effect) doxycycline (periodontitis). Additionally, has treating pityriasis versicolor preventing skin aging may have anti-dandruff effects. These findings not only underscore diverse but also emphasize comparable established treatments. Further research imperative comprehensively evaluate LGEO’s effectiveness, safety, mechanisms action, interactions other medications, long-term tolerability across populations.

This study aimed to evaluate the effect of sous vide heat treatment and different packaging methods on microbiological quality red peppers (Capsicum annuum L.) during their refrigerated storage. Peppers Roberta variety were used in study. The was carried out under vacuum conditions for all methods. ATM (unaltered gas atmosphere) MAP (modified atmosphere packaging) products repackaged aseptic into a suitable gaseous after cooling an unaltered (ATM), modified (MAP: 30% CO2, 70% N2). thermal performed three variations: 30 min/60 °C, 15 min/70 8 min/80 °C. stored at 3 ± 1 °C until bacterial count first exceeded 4 log CFU/g, but no longer than 24 days. pH, TVC, Enterobacteriaceae count, microscopic filamentous fungi determined products. A qualitative analysis microbial isolates also using MALDI-TOF mass spectrometry. Sous reduced number TVC (total viable count) (<2 2.35 CFU/g), CFU/g) compared with control (TVC 3.54–3.86 CFU/g). use combined culinary effectively extends shelf life peppers, from 6 days raw 15–24 depending method. In recent years, essential oils (EOs) have received interest due to their antibacterial properties. Accordingly, the present study aimed investigate effectiveness of EOs obtained from seven species Salvia on three strains Listeria monocytogenes (two serotyped wild and one ATCC strain), a bacterium able contaminate food products cause foodborne disease in humans. The analysed were cultivated at Botanic Garden Museum University Pisa, air-dried aerial parts subjected hydrodistillation using Clevenger apparatus. via gas chromatography coupled with mass spectrometry for evaluation chemical composition, they tested inhibitory bactericidal activities by means MIC MBC. Eos showed promising results, best outcomes reached S. chamaedryoides EO, showing an 1:256 MBC 1:64. predominant compounds this EO sesquiterpenes caryophyllene oxide β-caryophyllene, together monoterpenes bornyl acetate borneol. These results suggest that these may possibly be used industry as preservatives natural origins.

This study compares the chemical composition, antioxidant capacity, and antibacterial properties of lavender essential oils extracted using microwave-assisted extraction (MAE) supercritical CO2 (SCDE). Gas chromatography–mass spectrometry analysis revealed that MAE oil contained higher levels linalyl acetate (36.19%) linalool (28.29%) compared with SCDE oil, which had values 28.72% 27.48%, respectively. The also showed superior activity, DPPH IC50 72.99 mg/mL FRAP 1.31 mM Fe2+/g, 80.84 1.14 Fe2+/g for oil. Antibacterial tests indicated exhibited lower MIC values, demonstrating twice activity against Bacillus cereus NRRL B3711, subtilis PY79, Enterococcus faecalis ATCC 29212 These results highlight bioactivity MAE-extracted making a preferred method high-quality from drought-affected plants.
