Excessive activation of the nucleotide-binding oligomerization domain-like receptor pyrin domain-containing protein 3 (NLRP3) inflammasome contributes to chronic inflammation. Thus, targeting NLRP3 by anthocyanins may prevent inflammatory diseases. Abstract Background Vaccinium corymbosum berries represent a source of anthocyanins and polyphenols studied tested for their healthy potential. The present study was aimed at isolating, characterizing, quantifying the anthocyanin‐enriched fraction obtained from blueberry assessing its biological protective effects against head neck cell lines under inflammatory‐related conditions. V. extract subjected to colorimetric analysis, antioxidant evaluation, HPLC‐DAD analysis. This characterized by chlorogenic acid 12 glycosylated anthocyanins, being most abundant delphinidin‐3‐O‐galactoside, delphinidin‐3‐O‐arabinoside, malvidin‐3‐O‐galactoside, malvidin‐3‐O‐glucoside, malvidin‐3‐O‐arabinoside. The phytochemical components and antioxidant capacity of Açaí (Euterpe oleracea) give it nutritional bioactive characteristics with anti-cancer anti-inflammatory properties; is exported mainly from Brazil to various places worldwide. In Ecuador, the cultivated Euterpe oleracea variety has an abundant production that not been used or studied in depth; because this, relevant expand study this fruit’s properties. This paper presents results evaluating concentration antioxidants activity different stages maturation geographical locations Açaí, for which samples obtained Ecuadorian provinces Sucumbíos Orellana have evaluated. Antioxidant concentrations were determined a UV/VIS spectrophotometer at 450–760 nm wavelengths. was using ABTS FRAP methods. It evidenced values total polyphenols flavonoids decrease increasing ripening; opposite effect occurs anthocyanins higher ripe fruits evidencing decreases ripening by both methods (FRAP ABTS).

El objetivo del presente estudio fue elaborar un zumo de maqui (Aristotelia chilensis) a partir polvo liofilizado y endulzado con azúcar blanca o miel abeja; para ser considerado como una bebida origen natural. Se realizaron diversos análisis: sólidos solubles, pH, acidez, humedad, materia seca, cenizas totales, azúcares proteína total, actividad antioxidante, grasa análisis microbiológicos (recuento aerobios mesófilos, hongos levaduras). Los resultados la capacidad antioxidante el fueron valores 283,93 mg/100 mL EAA 364,16 EAA. contenido total preparado 14,42 g/100 mL, mientras que 13,3 mL. sabor aroma los dos tipos zumos aceptados por panel organoléptico no entrenado. principal beneficio producto desarrollado es aprovechamiento fruto nativo bosque, rico en antioxidantes, vitaminas fibra, se somete proceso liofilización conservar sus propiedades nutricionales organolépticas, manteniendo su sabor, color originales.

The tropical highlands, which are less affected by global warming than lower areas, offer land suitable for the cultivation of fruit trees. These species mostly native to Andes themselves, belonging families Solanaceae, Passifloraceae, Mirtaceae, Rosaceae, and Ericaceae. They cultivated in Colombian Andes, areas with increased solar radiation, between 1600 3200 m above sea level temperatures 11 24°C. For better adaptation these conditions, growers use local germplasm achieve sustainable except some introduced varieties. Good is shown cape gooseberry, Andean blackberry, banana passionfruit, feijoa, apple, peach, pear, Japanese plum. In addition, other genera Ericaceae stand out their sustainability. Studies on sustainability trees have been carried growers, technical advisors, universities, Agrosavia, focused phytosanitary control, genetic resources, cultural management.

Around 450 species of blueberries the genus Vaccinium are known, which some have gained preferential breeding, such as ‘Biloxi’ variety. Some little studied species, leucanthum Schltdl. located in Mexico, could be a potential source bioactive compounds. In this study, phenolic compounds (chlorogenic acid content, hyperoside, phenols, flavonoids, tannins and total anthocyanins content) well biological activity (antioxidant, antimicrobial, xanthine oxidase converting enzyme inhibition angiotensin I inhibition) were studied, making comparison with Biloxi variety, is most widely cultivated one. The extract V. showed highest content flavonoids (4.853 ± 0.341 mg QE/g DW), (0.303 0.008 CGE/g petunidin-3-glucoside (6.92 0.12 PGE/g malvidin-3-glucoside (11.80 0.10 MGE/g DW) hyperoside (5.137 0.100 HE/g DW). It should noted that same tannin efficacy Angiotensin I-converting ‘Biloxi’, antibacterial effect against enterobacteria Salmonella choleraesuis ATCC 12022, Escherichia coli 12792and Shigella flexneri 10708. These findings demonstrate extracts an important preservatives nutraceutical for use foods medicines.
