Olive mill wastewater (OMWW), with its high level of phenolic compounds, simultaneously represents a serious environmental challenge and great resource potential nutraceutical activities. To increase the knowledge OMWW's biological effects, an aim to developing food supplement, we performed chemical characterisation extract using Liquid Chromatography-Quadrupole Time-of-flight spectrometry (LC-QTOF) in vitro genotoxicity/antigenotoxicity assessment on HepaRG ™ cells. Chemical analysis revealed that most abundant compound was hydroxytyrosol. Biological tests showed not cytotoxic at lowest tested concentrations (from 0.25 2.5 mg/mL), unlike highest 5 20 mg/mL). Regarding genotoxic activity, when non-cytotoxic concentrations, did display any effect. Additionally, OMWW antigenotoxic activity (J-shaped dose-response effect) against known mutagenic substance, reducing extent DNA damage co-exposure treatment. The effect also obtained post-exposure procedure, although only 0.015625 0.03125 mg/mL. This behaviour confirmed pre-exposure protocol. In conclusion, present study established maximum non-toxic dose for cell model, smoothing path future research.

Listeria monocytogenes (LM) is a frequent post-process contaminant in meat products. This study aimed to investigate the antilisterial effectiveness of antimicrobial treatments employing olive mill wastewater polyphenolic extract (PE) commercially manufactured frankfurters. Frankfurters were inoculated on surface with three-strain LM mixture (~102 CFU/g), treated PE 2-fold series concentrations (PM, 2PM, 4PM) and control group (CTR) PE-untreated samples. Then, frankfurters vacuum-packed stored at 4 °C for 28 days. Samples examined days 0, 7, 14, 21, count, silico growth modeling, impacts pH, water activity (aw), sensory characteristics. From T(time) treatment showed significant effect growth, registering maximum Δ values between CTR 4PM 3.19, 4.86, 4.59, 4.39 T7, T14, T21, T28, respectively. Minimum was attributable PM (CTR versus PM) 2.07, 2.52, 1.14, 0.65 No changes occurred pH (average 6 T0 5.9 T28), aw 0.978 0.968 nor profile (p > 0.05). These findings suggest that an effective natural antimicrobial, offering promising approach enhancing food safety extending shelf life

Lipid production from olive-mill wastewater (OMW) by Yarrowia lipolytica NRRL YB-423 was optimized (biomass concentration and lipid yield based on dry cell weight) using multi-response criteria the Taguchi orthogonal array. Sixteen experimental runs were performed L16 Dilution rates of OMW (15, 30, 45, 60%), Tween 80 (0, 0.2, 0.4, 0.6%), sodium chloride (NaCl; 0, 1, 2, 3%), sterility selected as factors. The significance parameters determined analysis variance (ANOVA). effects all factors statistically significant (p<0.05). results showed that had a maximum contribution 48.12% to yield. highest (40.88 %) achieved in sterile medium supplemented with 15% diluted OMW, 0.6% 80, 3% NaCl.
