Studies show that university students, especially food insecure were often negatively affected by the COVID-19 pandemic. For Germany, no data covers this time period, differentiating between security statuses. We conducted a cross-sectional online survey (n = 562) November and December 2021 at Justus Liebig University Giessen, using validated Food Insecurity Experience Scale to assess (in)security. Our results affirm changes in academic performance, health eating habits during pandemic, with participants being more affected. Preventive measures are needed mitigate adverse effects of crises, targeting all, but students.

Additionally, it examines correlations different food groups reveal associations patterns. Methods: The investigation uses observational FINESCOP project Iceland. Spearman’s correlation coefficients were used identify between intakes. p values show significance at a level of <0.05. Results: Icelandic have low intake vegetables and salad (“3–4 times per week”, n = 159, 24.8%), fruit (“1–2 164, 25.6%), whole wheat 147, 23.2%). Lower than these was legume (“Never/seldom”, 203, 32.0%). Meat eggs consumed more frequently 231, 36.3%) compared fish seafood 277, 43.5%). While findings do indicate significant (p < 0.001) vegetable 0.001), causal relationships cannot be established. Among discretionary foods, sweets snacks moderately significantly correlated 0.001). Background/Objectives: Food insecurity (FI) is the ‘limited or uncertain availability of nutritionally adequate and safe foods’. Although literature suggests a strong association between FI, socioeconomic status (SES), health, nature their relationship not well specified in vulnerable population groups such as university students. To address this gap, study aimed to assess prevalence FI among students, examine its with various health outcomes, explore potential mediating effect SES. Methods: This cross-sectional survey included convenience sample 394 participants from University Basque Country UPV/EHU (Spain). Data on SES, demographic lifestyle factors, outcomes were collected December 2021 January 2022, using questionnaire developed by Insecurity European Students during COVID-19 Pandemic (FINESCOP) consortium. Internal consistency was assessed at Cronbach’s α. measured Experience Scale (FIES) FAO, which validated through testing Rasch model assumptions. Results: Overall, 19% students food insecure, 2.5% experiencing moderate 0.8% severe FI. Adjusted linear regression models showed that associated higher body mass index (BMI), poorer self-rated worsening pandemic. SES mediated strongest mediation observed for BMI (indirect association: B = 0.25, 95% CI −0.17–0.75; total 1.85, 0.14–3.56; 15.3% mediation). Conclusions: prevalent it multiple negative partly explained effectively education institutions should consider implementing comprehensive strategies. For future research, longitudinal studies would be recommended systematically monitor causal relationships.

The addressed food security status; demographic, socioeconomic, educational variables; academic performance; consumption; social support networks. validated Insecurity Experience Scale used to measure security. Binary logistic regressions adjusted by age gender were applied identify FI-related factors. (3) Results: Just over 17% of living with some level FI, nearly one three reported having consumed few kinds food, 3.9% spent entire day without eating due a lack resources. associated higher likelihood negative performance, decreased consumption, lower large network, when compared food-secure respondents. (4) Conclusions: findings suggest that FI negatively impacts students' performance consumption. Future public health programs should be prioritized prevent from experiencing hunger financial or resource constraints.
