Vitis vinifera is the grape variety used in production of wine and other products. In process, many vine’s by-products are wasted, namely seeds stems. Given proportion worldwide, quantity beginning to be an environmental problem, making it urgent take measures for their use obtain bioactive compounds with health benefits. The aim this work was study antioxidant antimicrobial activities extracts from stems four Portuguese varieties: Touriga Franca, Nacional, Viosinho, Tinta Roriz. Total phenolic (TPC) total flavonoids (TFC) contents present different were evaluated, as well activity, by DPPH FRAP methods. TPC TFC values stem’s much higher than those same solvent. activity aqueous ethanolic stem that obtained seeds, showing related content polyphenols. seed determined against yeasts Gram-positive Gram-negative bacteria, effect based on minimal inhibitory concentrations calculated (MIC). general, ethanol:water (1:1) extract varieties tested inhibited C. albicans ATCC10231 krusei ATCC6258 growth even at 200 μg/mL, fungicidal μg/mL. type showed selective inhibiting S. aureus ATCC29213 but having no E. coli ATCC25922 bactericidal (at μg/mL) Viosinho.
